I was not sure what to expect when the box arrived. It definitely was a big surprise when I opened the box.

What is Blue Apron?:
Blue Apron is a weekly subscription box that delivers full meals to your doorstep. By full meals, I mean they send you everything you would need to make the meals with the exception of the pots/pans, cooking utensils and oil. Not a shabby deal if you ask me! The meals come in a refrigerated box so they stay fresh and don't spoil. Each week they offer 3 meals, based on your dietary preferences, that you can choose from or if you don't like any of them you can skip that week. You can pick just 1 or all 3 if you want to! Inside the brown bag are the spices and the lemon. I did not use the lime for this recipe as pictured. I was going to use the lime because I couldn't find the lemon...the lemon ended up being in the knick-knacks bag! Ha!

Prior to this recipe; I had never made any of the sides and I had not cooked salmon in a pan. Normally we BBQ our salmon. I found making this recipe to be extremely easy and rewarding as the food was full of flavor. This was my partner's favorite recipe out of the 3!
I really enjoyed this recipe because I was able to try new foods and learned new ways to prepare food.
My Recipe Rating: A+

Not pictured here is the rice I used. Blue Apron sent me the white rice to use but I was unable to make it. I do not have the correct pot to make the rice in so I ended up using the Uncle Ben's Boil in a Bag Long Grain Brown Rice that I had, I purchased a couple of additional peppers and ground beef so I could make extra for our lunches and I also made refried beans on the side.

This recipe was my favorite of the 3! I love the Lime-Crema sauce because it was very tart and it completed the dish. I am not familiar with Mexican Crema but what I discovered is that it is a lot like sour cream only much thicker! The rice was a little sweet due to the currants, it had great texture due to the pepitas and the flavors were explosive. So Yummy! I will be making this recipe again!

I was unable to use the rice included for this meal due to my issue with having the wrong pot. I used the Uncle Bens Boil in a Bag rice, again. I really need to buy a few different size pots so I do not keep running into this problem. I prefer making rice on the stove top rather then the boil in a bag rices or a rice cooker. I purchased additional chicken so I could make leftovers for our lunches!

I love the fun concept of this dish with the chicken being on skewers. I loved the way the green tomatoes were prepared. They were flavorful and fresh tasting. This would be a great side dish to make for a BBQ or as a snack on a hot summer day. In the past, I have only had fried green tomatoes, so it was nice to try them prepared differently and I am sure this is much healthier for you then fried! The peanut sauce was so good and I would not have thought to pair peanut butter and chicken together. I wish I would have known about this before! This is now my favorite dip for chicken..sayonara ketchup!

After making all 3 of these meals; I feel like my own Chef!! It's nice that a regular person like myself can make gourmet meals in the comfort of my own home, at half the cost!!
I love that you can pick and choose which meals you want to receive, the calories are low and that everything is easy to make. There is no grocery shopping involved; which lets be honest, shopping is a pain in the butt to do sometimes!
I appreciate how this subscription box gives you the freedom to be creative, try new foods, learn new ways of preparing meals, its cost efficient and easy. I am not sure I could say easy enough but it honestly is!
